The CUISTOT restaurant incorporates a rustic French farmhouse theme with spacious dining areas separated into 4 major rooms to accommodate up to 290 diners, including 80 on the outdoor heated terrace. For private parties there is the comfortable wine room which seats 40. The largest dining room features a giant cozy fireplace. The Bernard's room overlooks the gleaming exposition kitchen for those who wish to experience the creative energy of the Cuistot Chef, Bernard Dervieuxs, and his staff in action.

Bernard was born in Condrieu, France where his family operated a farm which is where Bernard gained his appreciation for fresh, tasteful food. At the age of 13 he became an apprentice charcutier working under the direction of Chef Paul Bucos in Lyon, France  as a cuisinier with Roger Verge in Le Moulin de Mougin. Sent to the US in 1974 to work as a saucier/sous Chef at Le Francais under Jean Bachet, he then worked at the Pump Room In Chicago as Executive Chef in 1978. Hired at the Beverly Hills Hotel in 1980 where he was Executive Chef until 1986, Bernard then went to Grand Champions Resort where he served as Executive Chef until he opened CUISTOT in 1987.
